Directions:
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray or olive oil.
- In a shallow dish, mix together almond meal (or almond flour), grated Parmesan cheese (if using), garlic powder, paprika, salt, and pepper.
- In another shallow dish, beat the eggs.
- Dip each chicken tender into the beaten eggs, then coat evenly with the almond meal mixture, pressing gently to adhere.
- Place the coated chicken tenders on the prepared baking sheet.
- Lightly spray the top of the chicken tenders with cooking spray or drizzle with olive oil to help them crisp up in the oven.
- Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through and the almond crust is golden brown and crispy.
- Serve the almond-crusted chicken tenders hot with your favourite dipping sauce on the side.
